Eggnog Sparkle Cookies
1 c. butter (at room temperature)
1 c. sugar
2 large egg YOLK's
1/2 c. eggnog
1 t. vanilla
2 ½ cups flour
2 t. baking powder
1 t. ground nutmeg
decorating sugar (assorted colors)
ground cinnamon
Preheat over to 400. Lightly grease cookie sheet.
In a large bowl, cream butter and sugar until fluffy and light. Beat in egg yolks until combined. Gradually add vanilla and eggnog.
In a separate bowl mix together flour, baking powder and nutmeg. Gradually add to butter mixture, beating until thoroughly mixed. Refridgerate dough 2 hours.
In small bowls prepare each color of sugar mixture. Use 1/3 t. of cinnamon for every 2 T. of sugar. Mix each color as desired. Roll dough into balls and roll into sugar mixture. Place on cookie sheet 2 inches apart and bake for 8 minutes. Makes about 4 dozen cookies. Enjoy!
